Commercial uses of anise

Anethole is the main constituent of anise and is responsible for the characteristic odor and flavor of anise.

Anise is used in Italian sausage, bologna, frankfurters, knockwurst, pepperoni, pizza topping and other processed meat items. It is used in bakery products and is an essential component of Italian anise cake and cookies. It is also use in beverage and chewing gum.

Oil of anise is used in the meat industry in Italian sausage and pizza toppings.
